According to the Records of Jiaxing Prefecture (Volume 34, Customs), “On the winter solstice, people worship their ancestors and congratulate each other with their hats and caps, just like the New Year’s Day ceremony.” People advocate taking tonic food during the winter solstice, which include red bean glutinous rice, ginseng soup, white fungus, walnut kernels stewed in wine, longan and boiled eggs, etc.
To this day, Jiaxing still inherits the custom of eating "longan fried eggs" during the winter solstice. The old people say that because the winter solstice has the longest night in the year, if you don't eat it, you will be cold all night and still feel hungry in the middle of the night.
——How to make red dates and longan fried eggs:
Ingredients: dried longan, red dates (optional), eggs, water, brown sugar/rock sugar (optional).
Steps:
=1: Rinse the peeled dried longan (and red dates) quickly, put them in a cooking pot, and add appropriate amount of water.
=2: Bring the longan (red dates) water to a boil over high heat, then reduce to low heat and simmer for 15 minutes.
=3: After 15 minutes, you can see that the longan (red dates) has expanded as shown in the picture.
