Eating dumplings on the winter solstice - in memory of Zhang Zhongjing <br /> Dumplings were originally called "jiao'er" and were said to have been invented by Zhang Zhongjing, the medical saint of China. The story of his "Quhan Jiao'er Soup" has been passed down among the people to this day. Zhang Zhongjing, whose name was Ji and whose courtesy name was Zhongjing, was a native of Nanyang in the Eastern Han Dynasty. He studied medical books hard since childhood, learned from many masters, and became the founder of traditional Chinese medicine. According to legend, when Zhang Zhongjing was the prefect of Changsha, he often cured diseases for the people.
One year, there was a plague in the local area. After Zhang Zhongjing retired from Changsha and returned to his hometown, it happened to be the winter solstice. When he walked to the bank of Baihe River in his hometown, he saw many poor people suffering from hunger and cold, with their ears frozen. It turned out that typhoid fever was prevalent at that time and many people died of the disease. He felt very sad and determined to save them. When Zhang Zhongjing returned home, there were so many people seeking medical treatment that he was very busy, but he was always worried about the poor people whose ears were frozen.
In order to commemorate Zhang Zhongjing, people would imitate the appearance of jiao'er to make food on the winter solstice every year. In the past, pork, mutton or other meats were often added to the dumpling fillings. He followed the method he used in Changsha and asked his disciples to set up a medical tent and a big pot on a vacant lot at the east gate of Nanyang. He would open the tent on the winter solstice and give medicine to the poor to treat their injuries. Zhang Zhongjing's medicine is called "Quhan Jiao'er Soup", which is a summary of more than 300 years of clinical practice in the Han Dynasty. The method is to boil mutton, chili peppers and some cold-relieving herbs in a pot. After cooking, these things are taken out and chopped, and wrapped in dough into ear-shaped "jiao'er", which are then cooked in the pot and distributed to patients begging for medicine. Each person gets two jiao'er and a bowl of soup. After drinking the cold-relieving soup, people feel hot all over, their blood circulation flows smoothly, and their ears become warm. People eat it from the winter solstice to New Year's Eve, which helps them resist typhoid fever and cure frozen ears.
Afterwards, in order to commemorate Zhang Zhongjing, people imitated the appearance of jiao'er to make food during the winter solstice every year. In the past, pork, mutton and other meats were often added to the dumpling fillings. Waiting for these steaming dumplings to be cooked and then eating a few of them is really warming to the body. People call this food "jiao'er", "dumplings" or "bianshi".
