Introduction: Our country has many folk cultural festivals, and different days have different meanings and customs. So have you ever heard of the "Aojiu Festival"? What day is this? Now, let’s follow the editor to get to know it. During the first month of the lunar calendar, you will have a good year. The first month is the most important month of spring. Mr. Shui Mo will share with you some knowledge about January. What is "Aojiujie"?Aojiu Festival is a traditional folk festival in the ten counties of Fuzhou, Fujian Province, which falls on the 29th day of the first lunar month. On this day, every household cooks Aojiu porridge to offer sacrifices to their ancestors or give it to relatives and friends; married women also have to send Aojiu porridge back to their parents' home to honor their parents. What are the customs and habits of the “Aojiu Festival”?The 29th day of the first lunar month is a traditional folk festival unique to Fuzhou and Xiapu. "Aojiu Festival" is also known as "Houjiu Festival" and "Filial Piety Festival". In the traditional concept of Fuzhou people, "Nine" is not a good day. Early in the morning of this day, every household uses glutinous rice, brown sugar, peanuts, red dates, water chestnuts, sesame seeds, longans, ginkgo nuts and other ingredients to cook a sweet porridge called "Aojiu porridge", which is used to worship ancestors or give gifts to relatives and friends. Married daughters must also send a bowl of "Aojiu porridge" to their parents' home as a gift to their parents. Some of them may also add Taiping noodles, eggs, pig's trotters, etc. In addition, anyone whose age is nine (in virtual age), such as nine, nineteen, twenty-nine... (called "Ming Jiu"), or a multiple of nine, such as eighteen, twenty-seven, thirty-six... (called "An Jiu"), should also eat a bowl of "Taiping Noodles" like celebrating his birthday, in order to pray for peace and health. How to make Aojiu porridge? It is mainly composed of water chestnuts, peanuts, red dates and longans. Lotus seeds and ginkgo nuts can be added. Cook them with white rice, glutinous rice and brown sugar until they are cooked or soft and become porridge before eating. (Peanuts and lotus seeds can be soaked or cooked half-cooked before cooking with rice.)Generally speaking, there are certain requirements for cooking "Aojiu Congee". It requires four steps and eight ingredients, including glutinous rice, red dates, raisins, dried longan, lotus seeds, peanuts, water chestnuts, and brown sugar. The porridge cooked in this way has color, fragrance and nutrition. The first step: Soak the glutinous rice for 30 minutes, and soak the lotus seeds and peanuts in clean water for 1 hour each. The soaked glutinous rice is not only cooked thoroughly but also fragrant; however, lotus seeds and peanuts are relatively hard and must be soaked for 1 hour before they can be easily cooked. The lotus seeds should not have a "core" in the middle, so that the cooked porridge will not taste bitter; after soaking the peanuts, the upper layer of skin should be removed, so that the porridge will not taste astringent. The second step: steaming. Pick up the soaked glutinous rice with your hands, wash it again and place it in a small steamer. Steam it over high heat for 10 minutes (if you use a pressure cooker, the high pressure time is the same). Remove from the heat, add appropriate amount of water, and put in the red dates, raisins, dried longan, lotus seeds, peanuts, and water chestnuts prepared in advance. Stir evenly with a rice spoon and cook over high heat for another five minutes. The third step: Add sugar. When the glutinous rice starts to become sticky, put in a certain amount of brown sugar (the amount of brown sugar varies from person to person). At this time, it should be cooked over low heat for 3 minutes (if the fire is too strong, the glutinous rice will easily burn due to its stickiness). Step 4: After the brown sugar is completely dissolved in the glutinous rice, stir it gently with a rice spoon. When the glutinous rice turns red, turn off the heat. This process only takes another minute. In this way, a bowl of porridge full of love and filial piety is cooked.
